Why the Italian cuisine is so popular
Unquestionably, the Italian cuisine is one of the most widespread in the world. In the first place, this is because of the unique bouquet of specific flavours and aromas of the dishes.In their cooking, through the centuries, culinary practices of Greeks, Arabs, Spanish, French, Austrian and Hungarian cookery were combined. As it is known, these peoples, during different periods of time, ruled different parts of the today's Italy, with which, of course, they left their imprint in the cookery as well.
In fact, the influence began to accumulate more since the time of the ancient Rome, where the feasts were incessant and recipes "came" from all over the Empire. So, for example, the first information for the preparation of the widely-known-today pasta was discovered in the graves of the Etruscans - people, that Rome conquered in the antiquity. Towards the 10th century, obviously, the pasta had already become quite popular, because then, a book was made with recipes for the preparation of paste products as well as Sicilian pasta.
Today the Italian paste products are the most various, even in shape. For example, spaghetti could be long, short, medium, slim, very thin. There are still dumplings, Ravioli, tagliatelle, etc. They are used for soups, broths, with sauces, for browning, frying, for salads or they are excellent with meat, fish, cheese, vegetables. Such a diversity is also typical for another culinary emblem of the Italians - the pizza which is hundreds of kinds as forms and fillings. Of course, the Italian cuisine is not only pizzas and pasta. Italy is a sea country, with varied lay and climate, which allows different kinds of livelihood - hunting, stock farming, vegetable growing, fishing, etc., which determines the enormous variety of dishes - paste, vegetable, meat, fish, all kinds of seafood, etc. An essential part of the mastery is the combination and the dosage of herbs - basil, marjoram, rosemary, cumin, garden tea and many others. Authentic Italian cuisine can be found in the specialized restaurants in Bulgaria as well, like for example in restaurant "Leonardo" in Bansko where even the products are original.
The Swiss cuisine is the emblem of Fondue.
In the base of the Swiss cuisine, are laid down the culinary traditions of the three main ethnic groups in the country - German, French and Italian. Of course, they evolved in accordance with the specific lay and climate and formed the typical Swiss culinary art.
Switzerland is a farm country with highly developed farming and it is known for its milk and cheeses. There are numerous meat dishes as well, including game; the lakes give the opportunity for fish specialities. The cheese along with the potatoes are ingredients of many of the Swiss dishes.
The most popular - as а culinary emblem - is the dish Fondue. In its classical variant, it is on the basis of cheeses and wine but the Swiss have also developed variants with meat, fish, vegetables. In our country, the various types, according to authentic recipes, can be tasted in the specialized restaurants such as restaurant "Fondue" in Bansko, which offers alpine cuisine from Switzerland and France. Classical Fondue is a dish made of different cheeses, which are melted in white wine, to a thick mixture. For the thickening, potato flour is used, which is dissolved in the wine. The flavours and aromas are enriched with different spices - garlic, cumin, dill, nutmeg, pepper. The recipe usually includes cherry brandy as well. In addition to the taste and flavours, Fondue is unique both as a way of preparation and consumption. It is prepared in the presence of the guests who participate in the preparation together with the hosts. It is prepared on an open fire on the table where the company is having a meal. This fire burns during the meal so that the dish is kept warm. It is consumed, from the common pot, by everybody’s dipping morsels using specific long forks. The morsels can be of bread or potatoes. Psychologists comment that with the shared emotions during the preparation and consumption, Fondue creates a sense of community and sympathy, and they even recommend it against loneliness, stress, and depression.
